Ingredients

  • 1 cup mixed microgreens

  • 1 cucumber (sliced)

  • 1 tomato (chopped)

  • ½ avocado (cubed)

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Salt & pepper to taste

Method

  1. Add all vegetables and microgreens to a bowl.

  2. Drizzle olive oil and lemon juice.

  3. Season lightly and toss gently.
